Harvard Beets (6)
12 med. beets, cooked, drained
1/4 c. sugar
1 Tbsp. cornstarch
1/4 tsp. salt
1/2 c. vinegar
1/4 c. grape jelly
2 Tbsp. butter
1 tsp. slivered orange peel
Peel beets. Trim and slice or dice. Combine sugar and next 2 in a saucepan. Blend in vinegar and jelly. Cook over mod. heat, stirring constantly, until thickened and smooth. Add beets and butter. Simmer 10 min., stirring occasionally. Serve garnished with orange peel.
