My grandma and mom entered this recipe in the Rochester, NY Cook-Off and won first prize! They're 2 of the best cooks in the world and have both taught me so much.
1 c. ricotta cheese
1/2 c. shredded mozzarella cheese
1/4 c. grated Parmesan cheese
10-oz. tube refrigerated large flaky biscuits
20 thin slices pepperoni
Combine cheeses in a mixing bowl; set aside. Halve each biscuit horizontally; gently shape into a 4"x2-1/2" oval. Place one pepperoni slice and one tablespoon cheese mixture in the upper half of each oval; fold dough up and over filling, pinching closed. Repeat with remaining ingredients. Arrange on a lightly greased baking sheet; bake at 350 degrees for 20 minutes. Makes 20.
