FRUIT SALAD WITH MOZZARELLA CHEESE

1 1/2 c. honeydew melon, cubed
1 1/2 c. cantaloupe, cubed
1 c. fresh peaches, sliced
1 c. seedless grapes
1 c. pitted dates, chopped
3/4 c. part skim Mozzarella cheese, grated
1/2 c. almonds, chopped
1/3 c. honey
1/3 c. frozen limeade concentrate, thawed
1 tbsp. corn oil or safflower oil
2 med. bananas, sliced
Romaine leaves
Strawberries
1. In a large bowl combine melons, peaches, grapes, dates, cheese and
almonds; toss lightly.
2. In a mixer bowl combine honey, limeade concentrate and oil. Beat until
whipped.
3. Add with bananas to fruit mixture. Toss gently.
4. In a salad bowl, arrange lining of romaine leaves. Spoon salad into
prepared bowl. Garnish with strawberries. Makes 12 servings at 180 calories
per
serving.
