1 1/2 tsp. vegetable oil
3 c. cold cooked rice
1/2-1 c. leftover pork, chicken or beef
6 chopped green onions
1/2 tsp. minced gingerroot
1 red or green bell pepper, diced
6 oz. snow peas cut in half
2 eggs
2 Tbsp. soy sauce
1/2 tsp. sugar

Heat oil in a skillet over med. heat. Add rice. Cook and stir about 5 min. Add next 5 and stir another 5 min. Push rice to side and break eggs in middle of skillet, Scramble. Stir in rice mixture. Add last 2 and stir 1 min. Serve immediately.
