Before you begin, write fortunes on small strips of paper for enclosing in
cookies.
Stir together:
1/4 c. sifted cake flour
2 tbsp. sugar
1 tbsp. cornstarch
Dash of salt
Add:
2 tbsp. cooking oil
1 egg white
Sir until mixture is smooth. Add:
1 tbsp. water
Mix thoroughly.
Make 1 cookie at a time On lightly greased skillet or crepe pan, pour 1
tablespoon of water; spread to 3 1/2 inch circle. Cook over low heat until
lightly
browned, about 4 minutes. Turn with wide spatula; cook 1 minute more.
Working quickly, place cookie on pot holder; put fortune in center. Fold
cookie in
half. Then fold again over edge of bowl. Place cookies in muffin pan to
cool.
