EASY PEPPERNUTS

EASY PEPPERNUTS

1/2 cup butter
1/2 cup brown sugar, packed
1 1/2 cups flour
1 teaspoon ground ginger
1/4 teaspoon baking soda
1/8 teaspoon salt

confectioners' sugar (for dusting)


Peppernuts are spicy little cookie bits that can be snacked on like peanuts.
Preheat oven to 300°F.

Combine butter and brown sugar in a saucepan and stir until butter has
melted. Stir in remaining ingredients (except confectioners' sugar).
Transfer contents of pan to an ungreased cookie sheet and flatten to a 7
inch square.

Cut into 1 1/2 inch squares. Do not separate.

Bake at 300°F for 25 to 30 minutes. Remove from oven. Re-cut along lines.

Cool, then coat with confectioners' sugar.

Variation: 1 tablespoon of candied ginger which has been finely chopped can
be added in place of the ground ginger.
