Easy, Cheesy Potato Soup

Easy, Cheesy Potato Soup
2 or 3 boxes of instant Potatoes Au Gratin
One onion, chopped
One bag of frozen mixed vegetables or California blend vegetables, or
another desired blend
Eight slices bacon chopped, or ham chopped; can vary amount to taste
1 cup milk or to taste
Two tbsps butter
Water
Salt to taste
Pepper to taste
Pre-fry and crumble the bacon. You might even want to saute the onion with
the bacon so that the bacon flavor is absorbed also into the onions.

Pour only the potatoes from the boxes into a Dutch oven or soup pot. Put
enough water in the pan to cover them and bring to boil. Pour in the
contents from

the cheese packets that were in the boxes of potatoes. Put in milk, butter,
mixed vegetables, onions, bacon or ham. Salt and pepper to taste. Stir all

together and let simmer for at least 20 minutes.
Then eat and enjoy! Also tastes great left over!
