EASY BAKED GRILL POTATOES
1 large Idaho or Russet Potato (per serving)
2 12x12-inch sheets heavy duty foil
olive oil or olive oil spray
1 large or 2 small garlic cloves
salt, pepper, garlic powder
Wash and scrub potato, remove any eyes. (Do not use potatoes with green
tinged skins).
Place potato in center of a sheet of foil (shiny side in). Spray well with
olive oil. Sprinkle with salt, pepper and garlic powder. Turn potato over,
spray or brush with oil and season the other side. Add 1 or 2 cloves garlic
(right next to the potato).
Wrap up ends of foil around potato. Place wrapped foil inside second sheet
of foil and wrap again.
Place over hot coals or over indirect heat of gas grill. Turn frequently and
bake for about an hour or until potato is fork-tender (varies depending upon
size of potato).
Serve as you would any other baked potato.
If you prefer a less crispy skin, add a tablespoon of water to the foil
packet before wrapping the potato.
