Baked Potatoes with Broccoli and Cheese

cooking time 1 to 1 1/2 hours
serves 6 to 8
6 medium size baking potatoes
1 head broccoli cut in to small flowerets
1 tablespoon butter
1 tablespoon flour
1 cup milk
salt and pepper
1/2 cup grated mild cheese
garnishes finely chopped green onions, sour cream or tomato
Preheat oven to 350. Prick potatoes all over with a fork. Place on a baking
sheet or wrap in foil. Bake until tender. Steam the broccoli over boiling
water for 3 to 5 minutes or until almost tender. Remove and set aside. Melt
butter in a medium saucepan. Stir in the flour and cook for about 1 minute,
whisking constantly. Slowly add the milk and whisk until smooth and thick.
Let the sauce come to a gentle simmer. Then add salt and pepper to taste.
Remove from the heat. Stir in the cheese. When the cheese melts add the
broccoli. To serve cut the potatoes in half. Place the potato halves on a
serving plate and top with the sauce. Garnish if desired.
