DH EASY MINCEMEAT CAKE:

DH EASY MINCEMEAT CAKE:

This cake is so easy and festive. It has the taste and
consistency of a Christmas fruitcake. It can be baked in a glass
9 x 13" pan for 1 hour (300* oven) or for approx. 2 hours in a
Bundt pan. Same temperature. It is truly delicious.

1 box of Duncan Hines Carrot Cake mix.
2 eggs, beaten.
NO OIL....Not required, due to Mincemeat.
1 cup water, approx.
1-28 ounce jar of Mincemeat.
1/2 cup of walnut pieces. (optional)
1/2 cup of red cherries, whole or halved.
1/2 cup of green cherries., whole or halved.
OR substitute cherries for - -
1 cup of mixed candied fruit.
1 container of Duncan Hines cream cheese icing. (if desired)
Turn oven to 300*.
Beat eggs in a large bowl.
Add Mincemeat and half the water.
Stir in the remaining fruit and nuts.
Add the Duncan Hines carrot cake mix and rest of the water.
Beat until mixed , on slow or stir in by hand until mixed.
Pour into a lightly greased 9 x 13" cake pan or a Bundt pan.
Bake for 1 hour if using a 9 x 13* cake pan or bake for approx. 2
hours if in a Bundt pan.
When baked, remove from oven and cool.
Spread top of cake with Duncan Hines cream cheese icing.
