DARK CHOCOLATE DISKS
1 cup sugar
1 1/2 cups packed dark brown sugar
1 1/2 cups softened unsalted butter
3 eggs
2 tsp. vanilla extract
4 1/4 cups flour
2 1/2 tsp. baking soda
1/2 tsp. salt
1 8-oz. milk chocolate bar, broken up
6 oz. semisweet chocolate chips
8 oz. Dark chocolate chips
In a large bowl, mix sugars and butter until smooth. Add the eggs and
vanilla. Mix well. Add the flour and baking soda. Mix well and add all three
types of chocolate.
Refrigerate the dough for 30 minutes.
Form the dough into 1 to 1-1/2-inch balls. Take a small drinking glass and
dampen the bottom. Use it to flatten each cookie to make a thick disc.
Line cooking sheets with parchment paper. Arrange cookies on prepared cookie
sheets. Bake at 375 degrees for 10 to 12 minutes. Tops will be light brown.
Remove to a cooling rack by simply sliding the parchment paper onto the
rack.
