Crystal's Vegetable-Beef Soup

I created this recipe when I couldn't find a similar slow-cooker recipe
using cabbage. I like to use both the slow cooker and stovetop...I just
think it has a better taste this way!
1-1/2 lb. beef chuck roast
3 14-1/2 oz. cans beef broth
2 1-oz. pkgs. onion soup mix
1 to 2 c. baby carrots
10-oz. pkg. frozen peas, thawed
1 head cabbage, finely chopped
8-2/3 c. cocktail vegetable juice
Combine beef, broth and soup mix in a slow cooker. Cover and cook on low
setting for 8 hours. Stir in carrots and cook until almost tender.
Transfer meat and carrots from slow cooker to a soup pot. Add remaining
ingredients; stir and cook approximately one hour, or until carrots and
cabbage are tender. Serves 8.
