A delicious vegetable packed creamy pasta primavera that's super easy and perfect for busy weeknights!

Ingredients

2 6 ounce boxes Horizon White Cheddar Cheesy Mac (plus 4 tablespoons Horizon Organic Butter and ½ cup Horizon Organic Milk called for on the package)
2 additional tablespoons Horizon Organic Butter
2 carrots diced
1 zucchini diced
1 yellow bell pepper diced
15 grape tomatoes halved
½ cup diced onion
2 teaspoons minced garlic
½ cup frozen peas
Optional garnish: chopped fresh basil leaves; Horizon Organic Shredded Cheddar Cheese

Instructions

1. Prepare both boxes of Cheesy Mac according to package instructions.
2. Meanwhile, melt additional 2 tablespoons of butter in a large skillet over medium-high heat. Add carrots to the skillet and sauté for about 2 minutes.
Add zucchini, bell pepper, tomatoes, onion, and garlic. Cook, stirring, about 1-2 more minutes, or until tender.
3. Add the prepared mac and cheese to the skillet with the vegetables and toss to combine. Add the frozen peas to the hot skillet and stir until warmed
through (about 1 minute). Garnish with fresh basil and shredded cheese, if desired.

Cooking for a smaller family? You can easily cut all of the ingredients in half (using just one box of Cheesy Mac), and prepare according to the instructions

Want to Prep Ahead? For even speedier last-minute prep, I like to chop all of the vegetables in advance and keep them in airtight containers in the refrigerator.
