Any veggies work well...we like it with broccoli, carrots and cauliflower.

1-lb. pkg. Kielbasa, chopped

1 onion, chopped

1 T. oil

9-oz. pkg. au gratin potato mix

8-oz. pkg. frozen mixed vegetables

Brown Kielbasa and onion in oil for about 5 minutes; stir in potatoes, sauce mix and 2-1/2 cups hot water. Heat to boiling; reduce heat and simmer, covered, for 10 minutes, stirring occasionally. Add frozen vegetables; simmer until vegetables are tender. Makes 4 servings.
