Corn Salad
2 c. frozen corns, thawed, drained
2 Tbsp. chopped onion
1 Tbsp. cider vinegar
1 tsp. sugar
1/4 tsp. dried oregano
Salt, pepper to taste
1/4 c. shredded carrot
Combine first 7 in a 2 qt. saucepan over low heat. Cook about 5 min. until sugar is dissolved. Add carrot. Cool. Chill.
