Cheesy Lincoln's Birthday Meat Log
1-1/2 pounds ground beef
1-1/2 cups bread crumbs
2 tablespoons minced onion
1/2 teaspoon marjoram, crumbled
Salt and pepper
1 large egg, lightly beaten
2/3 cup milk
8 slices sharp Cheddar cheese
Topping:
6 servings prepared instant mashed potatoes
1 tablespoon butter
1 teaspoon onion salt
2 large egg yolks
1/4 cup milk
Mix together beef, bread crumbs, onion, marjoram, salt and pepper.
Beat egg until foamy and add to the meat mixture.
Add milk to meat mixture and mix gently but thoroughly.
Shape into a 9 by 12 inch rectangle on wax paper.
Using paper as a guide, roll meat mixture into a 9 inch cylinder.
Place on a shallow pan and bake at 350 degrees F. for 45 minutes.
Prepare instant potatoes.
Add butter and onion salt to potatoes.
Beat egg yolks and mix into potatoes.
Add milk.
Take meatloaf out of oven and frost with mashed potatoes.
Return to oven for 10 minutes longer.
Place cheese on top and return to oven for just a couple more minutes, until
cheese melts.
