Birthday Spaghetti Salad
2 pounds spaghetti, cooked al dente and drizzled with olive oil
2 pounds small shrimp, peeled and cooked
2 red onions, diced
1 large cucumber, diced
1 pound cherry tomatoes, halved
1 c cauliflower, chopped
Fresh basil leaves
Dressing:
4 tbsp white wine vinegar
1 tsp garlic powder
1 tsp onion powder
1 c olive oil
Salt
1 tsp dried basil
2 tsp oregano
1 c Parmesan
For dressing: Combine wine vinegar, garlic powder and onion powder. Pour in
olive oil, whisking to emulsify. Add salt and herbs. Adjust to taste. Toss
pasta in the dressing and add all other salad ingredients. Add more olive
oil as needed, pasta should be just lightly coated in oil. Sprinkle with
grated Parmesan.
