Bernie's Pimiento Cheese (4 c.)
1 1/2 cups good-quality mayonnaise
4-ounce jar diced pimientos, drained
8 ounces sharp cheddar cheese, finely shredded
8 ounces extra-sharp cheddar cheese, coarsely shredded
1 1/2 teaspoons Worcestershire sauce
1 1/2 teaspoons grated onion
1/2 teaspoon cayenne pepper
In a large bowl, mix mayonnaise, finely shredded cheddar cheese, Worcestershire sauce, grated onion and cayenne pepper together. Stir in drained pimientos; then add coarsely grated cheddar cheese, stirring until well combined. Cover and refrigerate at least 2 hours before serving.
