Amish Apple Salad

Makes 6-8 servings

Prep Time: 30 minutes
Cooling Time: 20 minutes
Cooking Time: 5-10 minutes

20-oz. can crushed pineapple
water
2 eggs, beaten
1½ cups sugar
2 Tbsp. flour
¼ stick (2 Tbsp.) butter, cut into chunks
1 tsp. vinegar
1 tsp. vanilla
6-8 peeled apples, chopped or grated
3 bananas, sliced
1. To make the dressing, drain pineapple and reserve the juice.
2. Add water to pineapple juice to equal 2 cups.
3. Combine pineapple juice, eggs, sugar, and flour in medium saucepan.
4. Cook until thickened, stirring continually to prevent sticking.
5. Stir in butter, vinegar, and vanilla.
6. Allow to cool.
7. In separate bowl, combine apples, bananas, and pineapple.
8. Pour dressing over fruit and stir to combine.
9. Cover and chill until ready to serve.
