A fast and fresh Caesar Dressing made with greek yogurt.

Ingredients

2 tablespoons olive oil
1 cup plain greek yogurt I use fat free
1/3 cup fresh lemon juice about 2 lemons
2 tablespoons dijon mustard
1 clove garlic
2 tablespoons anchovy paste
1 teaspoon worcestershire sauce
1/3 cup grated parmesan cheese
1/4 teaspoon salt
1/8 teaspoon fresh ground black pepper

Instructions

1. Add all ingredients to blender or food processor.
2. Blend for about 10 seconds until smooth. Taste for seasoning. More salt,
pepper, anchovy paste?
3. Store in glass or plastic container.
4. Chill for 30 minutes before serving.

Recipe Notes
Makes about 1 1/2 cups of dressing.
If using a thicker brand of yogurt such as FAGE, you may want to thin with a
couple tablespoons of milk.
