Vanilla Custard
2 eggs
1 cup low-fat milk
Sugar substitute to equal 2 tablespoons sugar
1 teaspoon vanilla
In medium saucepan, beat together eggs, milk and sugar substitute over low heat. Simmer, stirring constantly, until mixture thickens and coats metal spoon. Set pan in cold water to cool. Stir in vanilla. Cover and chill. A dab of whipped topping, not cream, may be added.
Makes 4 servings.
