Two Tone Ice Cream (1 qt.)

2 (3 oz.) pkg gelatin of same flavor
1 c. boiling water
1/2 c. sugar
2 1/2 c. cream
2 Tbsp. lemon juice
grated rind of 1/2 lemon
1 c. boiling water

Dissolve one package gelatin in 1 c. boiling water. Pour to make a thin layer in a flat bottomed pan and chill.
Combine other pkg. of gelatin with sugar and remaining boiling water. Cool; stir in cream, lemon juice and lemon rind.
Freeze in ice cream maker according to manufacturers directions. Dice set gelatin and fold in.
Substitute orange rind when using orange gelatin, lime rine with lime. For confetti
ice cream, combine two contrasting flavors taking care not to clash coors.
