Ingredients

½ cup canola oil
4 eggs
1 cup baking mix such as Bisquick*
½ cup grated Parmesan cheese I use the powdered kind in the can
½ cup shredded Cheddar cheese
1 small sweet onion diced
3 cups thinly-sliced grape or cherry tomatoes

Instructions

1. Preheat oven to 350°F (180°C). Spray a 9-inch pie plate with cooking spray and set aside.

2. Place oil, eggs, baking mix, Parmesan, Cheddar, and onion in a large mixing bowl and stir to combine. Gently fold in tomatoes. Pour into prepared dish.
3. Bake for 40-45 minutes, or until cooked through and golden brown.
