Sweet Potato & Tofu Patties*

vegetarian patties.
Prep Time: 25 minutes
Cook Time: 20 minutes
Serves 4
Ingredients Patties:
2 cups (250 g/500 ml) peeled & grated sweet potatoes
6 oz (170 g) firm tofu, patted dry & grated
1 cup (120 g/250 ml) coarsely crumbled feta cheese
5 eggs, lightly beaten
1/2 cup (75 g/125 ml) unbleached all purpose flour
2 green onions, chopped
1/4 cup (10 g/60 ml) chopped cilantro
1/2 teaspoon (2.5 ml) ground coriander seeds
pinch of cayenne pepper
2 tablespoons (30 ml) vegetable oil
Ingredients Sauce:
1 cup (250 ml) tzatziki sauce
1 tablespoon (15 ml) chopped fresh mint
Directions Patties:
1. With the rack in the middle position, preheat the oven to 350ºF (180ºC).
Line a baking sheet with parchment paper or a silicone mat.
2. In a large bowl, combine the sweet potatoes, tofu, feta cheese, eggs,
flour, green onions, cilantro, coriander seeds & cayenne pepper.
3. Season to taste with some salt & pepper.
4. In a large non-stick skillet over medium heat, cook a few patties at a
time in the vegetable oil, using 1/4 cup (60 ml) of the mixture for each
patty.
5. Flatten the patties as they cook. Brown them on both sides, then drain
them on the paper towels before placing them on the baking sheet.
6. Once the whole mixture has been made into patties & browned, bake them
on the baking sheet for 10 minutes or until they are cooked through.
Directions Sauce:
1. Meanwhile, in a small bowl, combine the tzatziki sauce & mint.
2. Season to taste with salt & pepper.
3. Serve the patties hot or at room temperatures with the sauce & a green
salad.
