2 c. flour
1 Tbsp. baking powder
1/2 tsp. salt
2/3 c. sugar
1 egg, beaten
1/3 c. oil
1/2 c. milk
1/2 c. sour cream
1 tsp. coconut extract
1 c. toasted coconut

Preheat oven to 400 degrees. Sift the flour with the next 3 ingredients. Stir in liquid ingredients, just until moistened. Fold in coconut extract and coconut. Fill paper lined tins full. Bake approximately 20 minutes.
