Sugar’s CHAMPURRADO

Sugar’s CHAMPURRADO​



2 round tablet of chocolate Ibarra or “abulita)

4 to 6 Cinnamon Sticks

3 12 ounce can of Evaporated milk

2 cups of maseca (ma secca)

1 to 2 cups of sugar. (To your liking)

Cayenne pepper to taste



Preparation:

Put cinnamon sticks with 2 chocolate tablets with water,

Bring to a boil

. After chocolate is dissolved, pour in 1 cup of sugar, taste as you go.

In a separate bowl, dissolve 2 cups of maseca with water.

Until all lumps are gone.(Use your very clean hands).

Once everything is at a boil, stir in the maseca slowly.

Keep stirring. Once everything is dissolved including the maseca in the pot, add the milk.

Keep stirring, until you can see bubbles rising. Once the bubbles are there, you may shut off the flame.

The secret is to keep stirring at all times.

Sprinkle with Cayenne Pepper
