Crust
11 ounces chocolate cookies
5-1/2 ounces butter
Filling
3 eggs
3-1/2 ounces sugar
5-1/2 ounces heavy cream
1/2 teaspoon salt
13 ounces bittersweet chocolate (at least 70% cacao)
5-1/2 ounces butter
Cocoa powder for sprinkling
For crust, finely crush cookies in a blender. Melt butter in a double boiler
or in the microwave oven. Pour melted butter into the bowl with cookie
crumbs and mix thoroughly. Transfer to a parchment-lined 8-inch springform
pan, tightly packing it in the bottom of the pan and also spreading it up
the sides. Bake at 350 degrees for 5-7 minutes. For filling, beat eggs with
sugar for just 2-3 minutes. Add cream and mix well. Melt chocolate and
butter in a double boiler. Alternatively, do this in the microwave oven in
30-second intervals on high power, stirring well after each interval. Let
cool for 5 minutes. Combine the chocolate mixture and the egg mixture until
smooth. Evenly spread filling over crust and tap on the pan sides a few
times to get rid of excess air. Bake in preheated 350-degree oven for 20-25
minutes. Cool pie for 2-3 hours. Sprinkle with cocoa.
