Rice Fantasy

Rice Fantasy
1/2 cup rice
2 green onions
1 boneless, skinless chicken breast
1 egg
3-1/2 ounces feta cheese
3 tablespoons sour cream
2 tablespoons oil
Dill
Salt and pepper
Cook rice for 20 minutes in boiling salted water. Cut chicken in small dice.
Chop green onions. Fry chicken in oil for 5 minutes. Add green onions and
cook for about 10 more minutes. Season with salt and pepper. Combine rice
with sour cream, egg and dill. Layer ingredients in muffin cups in the
following order: Rice mixture, meat mixture, sliced feta, and again rice
mixture. Bake in preheated 375-degree oven for about 25-30 minutes.
