Quick Pita Pizzas (4)

2 (9-10 inch) pita breads
1 cup pizza sauce
2 cups shredded cheddar and mozzarella cheeses
2.2 ounce can sliced ripe olives, drained
3/4 cup chopped leftover cooked vegetables (broccoli, zucchini, eggplant, and/or peppers)
1 cup chopped cooked meat (ham, turkey, chicken, salami, and/or sausage)

Preheat oven to 450F. Split each pita bread into 2 thin rounds. Arrange cut sides up on baking sheets. Spread each with about 3 generous tablespoons pizza sauce and sprinkle each with 1/2 cup cheese. Top with a sprinkling of olives, vegetables, and meat.
Bake 5 to 8 minutes, until pizza is very hot and cheese is melted. With a sharp knife, cut into wedges to serve.
