Potato Salad With Salmon
5 potatoes, boiled in their skins
11 ounces fried salmon fillet
2 tablespoons olive oil
1 large bunch green onions
Juice of 1 lemon
Salt to taste
Slice fish, place into a salad bowl, drizzle with lemon juice. Add finely
chopped green onions, mix together and season with salt. Peel and slice
potatoes and combine with olive oil. Stir together the potatoes and the fish
mixture.
