Cool and refreshing, we love this easy dessert.

2 c. sour cream

1/2 c. sugar

1 t. vanilla extract

12-oz. pkg. vanilla wafers

28-1/2 oz. can crushed pineapple, drained

Optional: frozen whipped topping, thawed

Combine sour cream, sugar and vanilla together; set aside. Layer vanilla wafers in the bottom of a 13"x9" casserole dish; spread pineapple on top. Add sour cream mixture, spreading evenly; cover and refrigerate for at least 4 hours. Cut into squares to serve; add a dollop of whipped topping before serving, if desired. Makes 12 servings.
