PINEAPPLE BANANA CAKE
3 cups flour
2 cups sugar
3 eggs
1 1/2 cups vegetable oil
1 cup crushed pistachios, Macadamia, or walnuts
1 tsp. baking soda
1 tsp. salt
1 (8 oz) can crushed pineapple
1 tsp. cinnamon
1 tsp. pure vanilla
2 cups mashed bananas
Preheat oven to 350°F. Grease a tube or Bundt pan or spray well with
non-stick spray. Dust lightly with flour, tapping out excess.
In a large bowl, whisk together dry ingredients (flour, sugar, baking soda,
salt, cinnamon) until no streaks remain.
Make a well in the center and add eggs, pineapple, nuts, oil, vanilla and
bananas.
Stir batter (do not beat), mixing well. Some lumps can remain in batter; do
not overmix.
Bake cake in a preheated 350°F oven until a toothpick inserted in center
comes out clean (about 75 minutes).
Cool on wire rack for 5 minutes before removing cake from pan.
