Pepper Jack Cheese and Herb Biscuits



Ingredients

Pepper Jack & Herb Biscuits

2 cups all-purpose flour

1 Tbsp. baking powder

1/2 tsp salt

2 tsp dried herbs (fresh would work as well), such as an Italian herb blend

1/2 tsp ground black pepper

1/2 cup butter, cold and cubed

1/2 cup pepper jack cheese, shredded

1 cup whipping cream



Topping

1/4 cup, melted (for brushing on top)



Instructions

Preheat oven to 400 degrees and line a baking sheet with parchment paper. In a large bowl, mix flour, baking powder, salt, pepper, and dried herbs together. With a pastry cutter or fork, work butter into the flour mixture, until the mix is crumbly. Add in pepper jack cheese, and mix. Lastly, add in whipping cream, and mix just until the dough comes together. On a lightly floured surface, turn out biscuit dough and knead 2 or 3 times, just until dough comes together in a ball. Pat the dough into a circle, about 3/4" thick. With a 2" biscuit cutter (or any size you want), cut out the biscuits and place on the baking sheet. Brush the tops of each biscuit with melted butter. Bake for 14-15 minutes, or until tops are golden brown. Enjoy!
