Peach Squares

Peach Squares

1 cup sifted flour
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/4 cup margarine
1/2 cup light brown sugar -- scant
1/2 scant cup sugar
1 egg
1 teaspoon vanilla
1 cup (1 large) fresh peach, chopped
1 tablespoon cinnamon sugar

Sift flour, baking powder, salt and cinnamon onto wax paper.
In a medium size saucepan, melt margarine over moderate heat. Remove from heat. Beat in sugars, egg and vanilla with a wooden spoon until smooth. Stir in flour mixture and Peaches until thoroughly combined.
Spread into a greased 8 x 8" pan. Sprinkle with cinnamon and sugar.
Bake at 350F 30 minutes or until top springs back when lightly pressed with fingertip. Cool completely in pan. Cut into squares.
