Oven-Baked Potato Pancakes With Parmesan
3-1/2 cups grated potatoes
3 green onions, finely chopped
1/2 cup grated Parmesan cheese
1 teaspoon salt
2 tablespoons olive oil
Preheat the oven to 350 degrees. Grease 12 muffin cups, set aside. In a
large bowl, combine potatoes, green onions, cheese and salt. Mix lightly,
using a fork. Drizzle with oil and mix well to evenly distribute all
ingredients. Divide mixture evenly among muffin cups. Pack lightly, using
back of a spoon. Place muffin pan on the bottom oven rack and bake for 1 to
1-1/4 hours. Leave in muffin cups for 5 minutes, then run a thin knife
between the muffin and the edge of cup to make sure the muffins don't stick
to the sides of cups. Carefully remove from muffin cups.
