Oven-Baked Potato Pancakes With Cheese
1-1/4 to 1-3/4 pounds potatoes
5-1/2 to 7 ounces cheese
2 eggs
2-4 cloves garlic
Salt to taste
Peel and coarsely grate potatoes, transfer to a colander to drain off juice.
Coarsely grate cheese. Finely chop garlic. Transfer potatoes to a large
bowl. Stir in cheese. Beat in eggs. Season to taste with salt. Mix in
garlic. Blend well. Heat the oven to 400 degrees. Line a baking pan with
parchment. Drop portions of batter into prepared pan, spacing evenly. Bake
for 20 minutes, or until a golden crust forms.
