Not Quite Sushi
11 ounces cooked rice
11 ounces lightly salted salmon
7 ounces cucumbers
1 avocado
7 ounces cream cheese
2-1/2 ounces heavy cream
Salt
Combine cream cheese and chilled heavy cream. Mix well. Mixture should have
the consistency of mayonnaise. Season with salt. Mix in rice. Finely dice
fish. Peel, pit and mash avocado. Finely dice cucumbers. Place half of the
rice in the bottom of a salad bowl. Top with a layer of fish, a layer of
avocado, another layer of rice, and top it off with cucumbers.
