MUSHROOM CIRCLES

1/2 lb. mushrooms
1/4 c. butter
3 tbsp. flour
3/4 tsp. salt
1 c. light cream
2 tbsp. chives or onion, minced
1 tsp. lemon juice
1/2 loaf white bread (22 oz.)


Chop mushrooms very fine and onions, then saute in butter 5 minutes or so.
Blend in flour and salt; add cream and stir until thickened. Add lemon
juice; stir. Remove crust from bread and roll each slice very flat with
rolling pin. Spread each slice with mushroom mixture and roll up as a jelly
roll. Slice to desired thickness and bake 400 degree oven for about ten
minutes. A little garlic powder can be added to mushroom mixture, if
desired.
