Muffin Patties

Muffin Patties
1 cup bread crumbs
1/2 cup grated Parmesan cheese
1 tablespoon olive oil
1 egg
1 boneless chicken breast, finely ground
1 cup chopped onions
2 cloves garlic, minced
1 tablespoon dried oregano
6 fresh basil leaves
Pinch of salt
Pepper to taste
16 small cubes Mozzarella
Heat the oven to 400 degrees. In a small bowl, combine half of the Parmesan
with bread crumbs, add olive oil and mix to evenly distribute the oil. In a
large bowl, lightly beat the egg. Add ground chicken, onions, garlic,
oregano, remaining Parmesan, chopped basil, salt and pepper. Mix well.
Lightly grease the sides of 16 muffin cups. Place about 2 tablespoons meat
mixture into each muffin cup, make an indentation in the center and place a
Mozzarella cube into the indentation. Top each muffin with a portion of
remaining meat mixture. Sprinkle each muffin with bread crumb mixture, press
lightly. Bake for 25-30 minutes, or until bread crumbs are golden brown.
Leave in the muffin cups for 5 minutes, then remove from the cups.
