MINT AND HONEY JELLY

MINT AND HONEY JELLY

2-3 tablespoons dried 4 oz fresh mint leaves
3/4 cup boiling water
1/2 cup (bottle or pouch) pectin
2 1/2 cups strained honey
green food coloring


Cover mint with boiling water. Let stand 15 minutes. Strain. Add enough
water to make 3/4 cup. Add honey.
Heat to boiling point. Add a few drops of food coloring to make a light
green. Add pectin, stirring constantly. Bring to a full rolling boil. Remove
from stove at once and skim off any foam.

Pour into sterile glasses or canning jars and seal.

Alternatively, process in a boiling water bath for 10 minutes (jars will not
need to be sterilized).
