Jamaican Banana Spice Cake

Jamaican Banana Spice Cake
1 cup butter or margarine
1 cup sugar
3 eggs, well beaten
2 1/2 cups all-purpose flour
1 1/4 teaspoons baking powder
1 1/4 teaspoons baking soda
1 cup dairy sour cream
3 teaspoons vanilla
1 tablespoon rum
1 teaspoon cinnamon (or pumpkin pie spice)
1 cup mashed, ripe bananas (about 3)
Cream together butter and sugar until light and fluffy. Add eggs. Sift flour twice, then resift with baking powder and baking soda. Add to butter mixture alternately with sour cream. Stir in vanilla, rum, spices and bananas by hand using a wooden spoon. Pour into a greased 9 by 13 inch pan. Bake in a preheated 350 degree oven for 45 minutes, or until done. When cake has cooled, brush with 3 tablespoons rum or wine. Frost with a butter icing.
