IRISH SODA BREAD
2¼ cups flour
1 tbsp baking soda
2 eggs
1 cup buttermilk
2 cups raisins, plumped in water and drained
Real Irish soda bread is simple, like this—don’t let anybody serve you some fancy two-bit fruitcake and tell you it’s the real thing. Irish eyes won’t be smiling.
Mix ingredients in turn. Add raisins. Briefly knead dough on a floured surface. Place into buttered and floured 8-inch round pan. Dough will be sticky. Bake approximately 45 minutes in a 350°F oven. Makes 1 loaf.
