Irish Bread Pudding with Carmel Whiskey Sauce

12 slices French bread, 1-inch thick
1/4 cup butter,melted
1/2cup raisins
1/4 cup Irish Whiskey or apple cider
2 eggs
3 cups milk
1cup sugar
2 tsp vanilla extract

TOPPING:
1 Tbsp sugar
1 tsp ground cinnamon

Preheat oven to 350°F
Spray 13 x 9-inch pan with cooking spray.
Brush melted butter on one side of bread slices.
Bake on baking sheet until lightly toasted.
Cut into 1-inch cubes and set aside in a large mixing bowl.
Stir together raisins and whiskey or apple cider in a small
bowl. Cover and set aside.
Whisk together eggs, milk, sugar and vanilla in a small bowl.
Pour milk mixture over bread and add raisins with liquid.
Mash bread with a wooden spoon and stir well until well coated.
Pour mixture into the prepared pan.
Combine 1 Tbsp sugar and 1 tsp cinnamon, and sprinkle over
pudding.
Bake for 35-40 minutes or until knife inserted into center
comes out clean.
Top with Caramel Whiskey Sauce.

Caramel Whiskey Sauce

1-1/2 cup sugar
2/3 cup water
1/4 cup butter
1/4 cup cream cheese
2 Tbsp Irish whiskey
Whisk together sugar and water in a large saucepan over medium
heat until sugar dissolves, stirring constantly.
Cook an additional 15 minutes without stirring, remove from
heat.
Whisk in butter until completely melted.
Add cream cheese and stir until combined.
Cool slightly, then whisk in whiskey.
Pour Caramel Whiskey Sauce over warm squares of bread pudding. Enjoy.
