INDONESIAN SALAD

2 half chicken breasts, skinned, boned, cut up

1 tbsp. vegetable oil

Crisp lettuce leaves

1 cucumber, sliced

1 orange, peeled & sliced

2 clusters seedless grapes

1/2 red or green or both bell peppers, sliced

1 banana, peeled & sliced

PEANUT DRESSING:

1/4 c. orange juice

2 tbsp. peanut butter

2 tbsp. vegetable oil

1 tbsp. soy sauce

1 tsp. brown sugar (optional)

1 tsp. ginger root

1/4 tsp. garlic powder

1/8 tsp. crushed red pepper flakes (optional)

Combine all dressing ingredients. Marinate chicken in 2 tablespoons dressing for 30 minutes or so. Saute chicken in hot oil until done. Line two salad

plates with lettuce. Arrange vegetable fruit and chicken on lettuce. Serve with peanut dressing. 2 servings.
