Ham Stuffed Cherry Tomatoes
1/2 c. very finely chopped cooked ham
1/4 c. Roquefort cheese, crumbled (1 oz.)
1/4 c. dairy sour cream
1/4 tsp. lemon juice
Dash of pepper
36 cherry tomatoes
Sprigs of parsley
1. Combine ham, cheese, sour cream, lemon juice, and pepper in a small bowl;
blend well. Refrigerate until ready to use.
2. With a sharp small knife, cut the tops of the tomatoes and scoop out
inside. Spoon about 1/2 teaspoonful of ham-cheese mixture into each
tomatoes, mounding slightly. Garnish each tomato with a small sprig of
parsley.
3. Party Day: Prepare in morning. Refrigerate until ready to use.
