HAM AND LENTIL SOUP

HAM AND LENTIL SOUP

1 cup brown lentils, rinsed, drained
1 cup chopped celery
1 cup sliced carrots
1/2 cup chopped onion
4 cups chicken broth
1/2 tsp. lemon peel
1/4 tsp. cayenne pepper
2 minced garlic cloves
1 cup chopped ham, (leftover cooked ham is fine)
2 cups chopped fresh spinach


In a 3-1/2 to 4-quart slow cooker, combine lentils, celery, carrots, and
onion. Stir in broth, lemon peel, cayenne pepper, and garlic. Cover, cook on
low for 7-8 hours or on high for 3-1/2 to 4 hours.
If using low setting, turn to high heat setting, add ham to cooker. Cover,
cook for another 10 minutes.

Stir in spinach.
