GRILLED PORK LOIN

GRILLED PORK LOIN

2 1/2 - 3 lb. boneless pork loin, split lengthwise
1 tsp. ginger
1 tsp. dry mustard
1 c. soy sauce (more or less, to taste)
1/2 c. sherry
1 tbsp. dark molasses
1/4 tsp. garlic powder and/or 5 cloves minced
1/2 tsp. salt


Combine soy sauce, sherry, salt, ginger, dry mustard and garlic powder.
Place pork loin in a shallow pan. Pour marinade over pork; cover and
marinate 2 hours or more, turning the meat occasionally.
Place loin on grill 6 to 8 inches above low coals. Grill 1 to 1 1/2 hours,
turning frequently. Brush with marinade several times during cooking.

To serve, cut in thin slices. Serve with hot mustard, if desired.

Makes 4 to 6 servings.
