Grapefruit Consommé Caribbean (6)
2 c. strained grapefruit juice
2 Tbsp. strained orange juice
2 Tbsp. strained lime juice
Dash angostura bitters
2-3 grapefruit, according to size
1 pkg. lemon gelatin
1/2 c. boiling water
Fresh mint for garnish
Blend juices and bitters. Peel grapefruit and divide into sections. Remove membrane and chop. Dissolve gelatin in water. Cool slightly. Add juices. Pour into bowls. Add grapefruit sections. Chill thoroughly. Garnish with mint at serving time.
