GRANDMA'S CANADIAN CAKE (WITH RAISIN

FILLING)

1 3/4 c. flour

1 tsp. baking soda

1/2 c. butter

3 tbsp. molasses

1 c. firmly packed brown sugar

3/4 c. buttermilk

2 lg. egg whites

Sift together the flour, soda, creamed butter and sugar, beat in molasses. Beat in

just until smooth. Blend in flour (in 4 additions) with buttermilk. Beat egg whites

until stiff, pour into 2 (8 inch) round layer cake pans, grease and lined with wax

paper.

Bake in a 350 degree oven for 25 to 30 minutes. Cool for 10 minutes. Remove paper

when cooled, put together with raisin filling.

RAISIN FILLING:

3 egg yolks

3/4 c. milk

3/4 c. brown sugar

1 c. raisins

1 tbsp. butter

1 tsp. vanilla. Enjoy.
