GELATIN CANDY (SOFT)

4 tbsp. (4 envelopes) unflavored gelatin
1 c. cold water
4 c. sugar
1 1/2 c. water
1/4 tsp. salt


Soak the gelatin in cold water for 5 minutes. Combine sugar, water, and salt
and bring to boil. Dissolve gelatin in boiling mix. Simmer 15 minutes.
Divide into 2 parts. Color 1 red and add 2 drops cinnamon oil. Color 1 green
and add 3/4 teaspoon peppermint extract.
Pour into two 8 1/2 x 4 1/2 x 2 1/2 inch pans that have been rinsed in cold
water. Let stand overnight where it is cold, but not in refrigerator. Turn
out on sugared wax paper and cut in cubes or squares or diamonds. Makes
about 5 dozen pieces.
